Chocolate Rum Cake Recipe – Coffee & Rum In One Cake!

If you like coffee and rum, you are really going to love this chocolate rum cake recipe! The cake and topping have a chocolate liqueur and then the whole cake is infused with a butter rum sauce. It is very moist, rich and delicious!

Tips:

  • Make sure you poke plenty of holes in the cake for the rum sauce to soak into the cake.
  • Pour the sauce slowly to give it time to soak in.
  • Let the cake sit till it is completely cool and sauce is soaked in.
  • The cake is better the day after!

Chocolate Rum Cake

Ingredients:

  • 1-3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup Kahlua – coffee-flavored liqueur
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees. Grease a bundt pan and dust with cocoa.
  2. In a large Kitchen Aid stand mixer bowl, sift together flour, cocoa, baking soda, baking powder, and salt.
  3. Add sugar and blend in.
  4. Add eggs, buttermilk, Kahlua, vegetable oil and vanilla. Beat for 2 minutes. This will make a very thin batter.
  5. Pour into prepared bundt pan.
  6. Bake at 350 degrees for 45-50 minutes or until a cake tester comes out clean.
  7. While the cake is baking, make rum sauce and coffee frosting.
  8. Immediately after taking out of the oven, use a butter knife and loosen the edges and center of cake from the pan. Using a wooden skewer, poke lots of whole in the cake making sure the skewer goes all the way to the bottom of the pan.
  9. Using a spoon, slowly pour rum sauce on top of the cake, making sure all the holes filled with the sauce as well as around the edge and middle of the cake. Use up all the sauce.
  10. Let cake sit in the pan till it is completely cool. Then invert cake onto a platter or cake server.
  11. Frost cake – recipe below.

With a knife loosen cake from sides and center of cake from pan.

With a spoon, slowly pour the sauce over cake, filling all the holes.

 

 

 

 

 

Rum Sauce

Ingredients:

  • 1 cup of sugar
  • 1 stick butter (1/2 cup)
  • 1/4 cup light rum – I used Captain Morgan’s brand.
  • 1/4 cup water

Directions:

Put all ingredients in a small saucepan. Bring to a boil stirring occasionally. Boil 1 minute and take off the heat. Slowly pour over hot cake.

Coffee Frosting

Ingredients:

  • 4 ounces cream cheese – softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons Kahlua – coffee liqueur

Directions:

In the bowl of a Kitchen Aid Mixer, beat together cream cheese and powdered sugar till light and fluffy. Add in vanilla and Kahlua. Mix well. Spoon frosting over cooled cake.
