Easy Homemade Fruit Pizza Recipe

I do not make this recipe very often!  I would eat too much of it!  But, it is is one that is requested often for birthdays and special gatherings.  My older kids have asked me to make it for them to take to their work functions as well. I don’t think I have ever seen any of it come back home!

Last year at our county fair, I noticed one of the venders selling fruit pizza next to our 4H lemonade booth. Several of our customers had a slice when they came to our booth to buy lemonade and I asked them how it tasted. They gave it rave reviews! So I decided to check it out after my shift. I was shocked at the price (really souldn’t have been, it was at a fair!).  Just one slice was $6.00!  For the cost of just two slices, I could have enough money to make two pans full!  Needless to say, I did not buy any but went home and made my own.

It wasn’t that hard to come up with my own recipe. I just used my favorite chocolate chip cookie recipe, made a cream cheese and powdered sugar frosting, then added, in season fruit.

This weekend I did a graduation party for my two oldest sons, and I made this dessert to go along with my daugther’s cupcakes. Since I had to mae six of these, and berries are what is in season, I used only berries and fresh pineapple to top them. This can really be made with any kind of fresh fruit you like. Even canned mandarin oranges, peaches, pears, in the winter when there isn’t as many nice fresh fruits available, can work nicely.

Most fruit pizza recipes call for a pre-made, refrigerated, sugar cookie crust.  In this recipe, the homemade cholcolate chip cookie dough really sets it off!  Who doesn’t like choclolate chips cookies and chocolate with fruit?

This recipe makes two large pan fulls. If you do not need that much, feel free to cut the recipe in half.

Chocolate Chip Cookie Crust

Combine together in a large bowl:

Dry ingredients.

4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

 

 

In another medium sized bowl, cream together:

1 1/2 cups butter – melted

2 cups packed brown sugar

1 cup white sugar

Beat into butter mixture:

2 Tablespoons vanilla extract

2 whole eggs

2 egg yolks

Cream together sugars, butter and vanilla.

Beat in 2 whole eggs and 2 egg yolks.

When mixture is light and creamy, add flour mixture 1/2 cup at a time until everything is combined well.

Blend in flour a little at a time.

 

 

 

 

 

Add chocolate chips.

Add to dough:

 

4 cups semi-sweet chocolate chips

 

 

 

Divide dough into two equal parts and press into two cookie sheets or pizza pans.  I used tin, disposable cookie sheets for the graduation party because I had to make so many.  Normally I use a round pizza pan when we are going to enjoy this at home with just family.

Divide dough in half and spread into two pans.

Bake 15 minutes in a 375 degree preheated oven.  Let cool completely.

Cream Cheese Frosting

Ingredients:

2 – 8 ounce packages cream cheese – softened

1/4 cup butter – softened

1 teaspoon vanilla

1 1/4 cup powdered sugar

 Cream all of the ingredients together, divide in half and spread on top of well cooled cookie crust.

Press cookie dough into pans, bake, cool and top with cream cheese frosting.

Fruit

Top with desired types of fruit. For these pizzas, I used strawberries, raspberries, blueberries and pineapple.

Top with fruit, cut into squares or pizza triangles. Serve! Keep refrigerated.
