Easy Homemade Peanut Butter Cookies – The Easiest!
I just love easy recipes! Especially the ones that make people want to ask you for the recipe. I never thought that an easy homemade peanut butter cookies recipe would be in that category of people asking me for the recipe. But, it is true. Every time I take these to an event, I get compliments and people wanting the recipe.
There are tons of peanut butter recipes out there, but none this easy and this good. This recipe is easy and the cookie is crisp on the outside but chewy on the inside.
What makes my recipe so different? All you have to do is measure out your ingredients in the listed order and put into the bowl of a stand mixer to make the dough, spoon out, flatten and then bake. That is it! The secret is to do it in order of ingredients and to not mix anything together till it is all in the bowl.
Most cookie recipes tell you to mix dry ingredients first, then mix all your wet ingredients and slowly combine the two. For some reason, this recipe does not work like that. At first I thought it was an error in the original recipe book, so I did it the traditional way of mixing dry ingredients then wet. They did not turn out any differently than any other peanut butter cookie recipe and I was a bit disappointed. I did it the way the recipe was written and they turned out wonderfully!
I found this recipe in an old cookbook that I purchased from an evangelist family. I started collecting cookbooks when I was a teenager and this was one of my first ones. The family traveled all over the world going from church to church, singing and preaching. A lot of the churches they visited had fellowship dinners and the wife of the family would ask for recipes from her favorite dishes. She then took these recipes and published them in a cookbook to sell as a fund-raiser for their ministry. This peanut butter cookie recipe is my favorite and most used recipe from their book!
Easy Homemade Peanut Butter Cookies
1 cup white sugar
1 cup brown sugar – packed
1 cup butter – softened
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup creamy peanut butter – you can use crunchy if you like nuts in your cookies
In a kitchen stand mixer bowl, put in ingredients in the exact order as given. Mix on a medium to medium high speed till dough is completely combined well.
Roll into balls, then flatten with a fork leaving the fork prints.
Bake on a flat stone in a preheated 350 degree oven for 7 – 10 minutes. Cookies should be lightly brown.
Let sit on stone for 5 minutes before removing to a cookie rack to completely cool.
