Easy Pumpkin Cookie Recipe

If you like a cookie that is more like a small frosted cake, or a cake like cookie, you will love this easy pumpkin cookie recipe. The cookie is full of pumpkin flavor and can be eaten alone or with this maple frosting. I liked them with and without the frosting. I was surprised that the pumpkin and maple flavors actually went together.
The recipe didn’t say this, but I think you should start by making the frosting. That way the frosting will be cooled by the time your cookies are cool. I made my frosting after I baked the cookies and I had to wait on my frosting to cool. So, if you make it first, it will save you time.
Easy Pumpkin Cookie Recipe
Frosting Ingredients:
1/2 cup brown sugar
3 tablespoons butter
1 cup powdered sugar
3/4 teaspoon vanilla
4 tablespoons milk
Cookie Ingredients:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup sugar
1 cup butter – softened
1 egg
1 cup pumpkin – baked and mashed
1 teaspoon vanilla
1 cup raisins
1/2 cup walnuts
Directions:
- Make Frosting: Combine all ingredients in a small saucepan. Bring to boil over medium heat and let boil 2 minutes. Set aside to cool completely. Frosting will thicken as it cools.
- Make Cookie Batter: Combine flour, baking soda, baking powder, salt, cinnamon and sugar in a bowl of a Kitchen Aid mixer on low speed.
- Add in softened butter, egg, pumpkin, and vanilla. Mix on medium speed till well combined.
- Mix in raisins and walnuts.
- Drop by a cookie scoop onto a baking stone.
- Bake at 350 degrees for 10 – 12 minutes or till cookies are lightly brown and set.
- After cookies are completely cool, frost with frosting.
