Pumpkin Bar Recipe With Cream Cheese Frosting
Here is another recipe I found in my collection of old cookbooks. The cookbook is from members of a Lutheran church. Their members must have a lot of German people because the title of the book is in German, “Schmecht Gut!” and several of the recipes have German names.
While going through the recipes and picking out my favorites, I found this pumpkin bar recipe with cream cheese frosting. I made it last night for my family and it makes a large pan full. They loved it! My older kids wrapped up some to take with them to work for their lunch. My younger ones enjoyed the rest of it today after their lunch.
Pumpkin Bar Recipe
1 2/3 cups sugar
1 cup oil
2 cups pumpkin – baked and mashed
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
Combine all ingredients in a bowl of a Kitchen Aid mixer and blend well. Put into a 15 x 10 x 1 inch jelly roll stone that has been sprayed with non- stick spray. Bake for 20 minutes at 350 degrees or until a toothpick inserted in the middle comes out clean. Let bars cool completely then frost with Cream Cheese Frosting.
Cream Cheese Frosting
3 ounces cream cheese – softened
1/2 cup butter – softened
1 teaspoon vanilla
2 cups powdered sugar
Put all ingredients in to a bowl of a Kitchen Aid Mixer and beat till light and fluffy. Spread onto cooled pumpkin bars.
