Simple Baked Chicken Recipe – Tender & Juicy
This dish is one of my husband’s favorite meals. He really likes how the chicken is browned on the outside, but juicy and tender on the inside. This simple baked chicken
recipe will help you get dinner on the table in less than an hour ( which includes prep time). Add rice or potato, vegetable or salad and dinner is done!
One of the main things I do not like about cooking white meat of a chicken, and particularly the breasts, is that it is so easily over cooked, chewy and very dry. Because of this, I avoided cooking with white meat for a long time. Even when I ordered it in a restaurant, it would be dry. So, to get the white meat cooked just right, do not over bake! It is that simple! At the end of the cooking time, take out a thick piece and cut in half. Look for any pink color. If there isn’t any, your chicken is done. If there is pink, continue baking for 5 minute intervals, and rechecking so that you do not over bake it.
4 large thawed and washed chicken breast halves – Using a sharp knife, slice in half and quarter. To slice chicken, place it on a cutting board, place one hand on top of chicken, Then slice it, with a good sharp knife, starting on the thick end and going all the way through to the smaller end. Then cut the two halves in half creating quarters.
1 cup plain breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon pepper
3 Tablespoons dried parsley
6 Tablespoons butter – melted
2 cloves garlic – minced
Juice of 1 lemon
- In a medium size bowl, combine bread crumbs, Parmesan cheese, salt and pepper. Dip each piece of quartered chicken in breadcrumb mixture and place in a baking dish. Discard any unused bread crumb mixture.
2. Melt butter, then add garlic and lemon juice. Stir well.
3. Drizzle butter mixture on top of bread crumb coated chicken.
4. Bake in a 350 degree oven for 30 minutes. Turn oven to broil and broil for 2 minutes to finish browning tops of chicken.
*Note: Be sure to not over bake and you will get a nice juicy piece of meat.
