Spinach And Mushroom Side Dish – Healthy And Taste Great!

My kids love spinach because of this spinach and mushroom side dish. I always have to make extra so that we are not fighting over who gets the last bit. If you are not sure about spinach, give this a try. Like Same I Am says in the Green Eggs and Ham book by Dr. Seuss, “You do not like them, so you say. Try them! Try them and you may, Try them and you may I say.”

Nutrition Facts of Spinach

Did you know that spinach is very good for you?  It is healthy because of the great nutrition that is in just a cup full.  When you sauté it, it is very easy to get a whole cupful into your diet because it cooks down so much.  You can also make salads with it if you enjoy it raw.

 

Ingredients

2 tablespoons cooking oil

1 pound fresh mushrooms – sliced

1 onion – diced

2 tablespoons garlic

2 pounds fresh spinach – washed

salt and pepper to taste

Directions

Heat cooking oil in a medium size cast iron skillet. Add mushrooms and onions. Saute on a medium high heat until mushrooms are tender and onion is translucent. Add in spinach and saute another 30 seconds. Turn heat down to a medium low and add 1/4 of the spinach or as much as your skillet will hold. Constantly turn spinach and as it cooks down, add more. Keep doing this until all the spinach is used. It doesn’t take long and it just has to be wilted. Season with salt and pepper.
